If you plan on using cinnamon oil for cooking you may already be aware that it costs around $6 for 1 ounce. You can make your own simply by adding cinnamon sticks to a jar of plain vegetable oil. The more cinnamon sticks you add the more potent your oil will be. Canning jars work great. The only drawback is that it needs to sit for about a month.
Cinnamon sticks can be pricy, but I just found a container of cinnamon sticks on Amazon.com for only $3.79! They come in an almost quart sized container which the company packs freshly on a weekly basis. Ooo! The fresher, the more flavor!
There are many uses for cinnamon. You can also research the health benefits online.
Mmmmm…I can smell it cooking on the stove right now! It makes the house smell wonderful! If you ever want a natural fragrance for your home, boil some water with some cinnamon for awhile. It is also a great idea to do this whenever showing a home for sale. It is a very inviting fragrance to the potential buyers. Why purchase those expensive home deodorizers when you can have something natural?
Happy cooking!

UPDATE: Shaking the container will speed up the process, but it creates additional loose pieces of cinnamon. If you wish, you can strain the oil to remove the pieces of cinnamon.
