Chocolate Raw Almond Milk Ice Cream Recipe

I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk, though it does contain eggs.  It is still very delicious for such a healthy ice cream recipe.  You can make chocolate raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazel nut ice cream, or whichever nut you choose.

Gluten-free Carrot Muffin Recipe

I had misplaced this recipe for about 2 years and wanted to make them for the last couple of months.  I was determined to find it today and did!  Hurray!  It had fallen out of my top kitchen drawer down below all of the other drawers.  Here’s my recipe.  These gluten-free carrot muffins are unique because they contain some Italian chestnut flour, which really makes the muffin.  They are heavy like brownies which make them very satisfying.  I hope you enjoy them!

Gluten-free Fudge Recipe – Raw

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it.  Unfortunately, I had no avocado for the frosting, nor raspberries for the filling.  Darn!  I tried a different spin on things and made a small portion of what I really would like to call “guilt-free” fudge brownies.  These make a great dessert as well as snack.  It is vegan, gluten-free, dairy free dessert and low sodium dessert!

Nana’s Banana Nut Bread Recipe

I just ran across a stack of recipes that belonged to my mother who passed away in 2002.  I thought my sisters and daughters would appreciate having her Banana Nut Bread Recipe.  She adjusted it so that it was not too sweet and not too sticky.

Greek Yogurt Ambrosia Recipe

If you enjoy ambrosia, but are searching for a healthier alternative check out this recipe.  This recipe contains Greek yogurt, which contains live cultures; and other ingredients that are known to aid in digestion; and are natural.

Cinnamon’s health benefits are multiple, and aiding digestion is one of them.   

FAGE Greek yogurt (non-fat version) does not contain any fat, but has live cultures.  A live culture means that it has friendly bacteria which is good for you.  Live yogurt is helpful for the gastrointestinal system.  However, FAGE’s non-fat yogurt does contain 3 grams of sugar (none added) and 20 grams of protein.  See FAGE Greek yogurt nutritional facts.  Also see what FAGE has to say about how they make their products here.    

Stevia is a great natural sweetener substitute.  My favorite brand of stevia is Stevita which comes in powdered or liquid.

Fondue: beef chicken shrimp; cheddar cheese beer; cream cheese balls; chocolate

We are having company on New Year’s Day and I am just wiped out from all of our overnight guest during the Christmas holidays.  Therefore, I want to make my work easy and serve something simple, yet elegant.  Fondue is something you can prepare ahead of time allowing time to mingle with your guests.

The best meal and most fun I have had is going to my favorite fondue restaurant in the San Francisco Bay Area, La Fondue.  I once made a very romantic fondue meal, replicating La Fondue’s feast, for my husband on Valentine’s Day.  My ideas for New Year’s Day was to do the same thing, which you can also use for a New Year’s Eve party.  Bread and vegetables served with a cheddar cheese and beer fondue sauce; beef, chicken and shrimp served with several sauces; and fruit, marshmallows, Snickers bars, cream cheese balls and more served with a chocolate fondue sauce. Best cannoli shell recipe

Watching my aunt make cannolis when I was little was fascinating to me.  I saw them in bakeries, but never gave thought to how they were made.  It was always a treat when she would make for them holidays and special occasions.  Our entire family would look forward to her cannolis. 

Though I love my aunt’s cannoli recipe, I was looking for a twist on the traditional cannoli and found what I believe to be the best cannoli recipe.   This recipe includes cinnamon.  This is the only recipe I could find where it suggests that you may make them in advance.  This is usually unheard of, as the cannoli shells usually become too soft when made in advance.  What also makes this recipe unique is that most recipes call for red or white wine.  This recipe calls for no wine at all.  I halved the recipe below because the initial recipe makes about 40 cannolis and takes several hours to do.  I like the fact the recipe calls for peanut oil instead of vegetable oil, as well.  It gives the shells more flavor.  I rewrote the instructions for the cannoli shells below for those without a pasta machine and for those first time cannoli bakers. I defined what kind of rack to use in your pot as well.

Chocolate Almond Brittle Recipe

Whenever we have company my guests really seem to enjoy my Chocolate Almond Brittle.  I have a lucite See’s Candy container where I store them and everyone believes it to be See’s Candy, and says they are delicious.  I then explain it is not See’s, but a homemade recipe.  It tastes similar to Almond Roca, but I like it much better.  Below I explain how to make it successfully.

Ingredients 

  • 1 cup sugar
  • 1/4 cup water
  • 1 Tablespoon light corn syrup
  • 1/2 lb butter (2 sticks)
  • 1/2 pound (1 cup) slivered almonds (You may also use walnuts, pecans, etc.)

Rich chocolate ice cream recipe for ice cream machine

This chocolate ice cream recipe is just to die for!  I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine.  It is the richest ice cream I have ever tasted!  The original recipe I tried earlier had less non-fat milk and more half and half.  That was way too rich!  Check out my version and it is still super rich!
