Summer heat already gotcha down? Try a refreshing salad instead of hot meal. Many people have trouble making gluten free pasta salad in advance. Rice pasta gets hard when refrigerated overnight. There are a couple of tricks to get you to succeed,though. Don’t use rice pasta. Try pasta made from other grains such as corn, quinoa, etc. If you must buy one that contains rice, at least make sure it is a mixture of other grains, too. Then, prior to refrigerating, add dressing, or at least oil, to the pasta to keep it soft. Keep in mind that gluten free pasta absorbs liquid quickly. Enjoy! If you’ve been wondering about the difference between golden and red quinoa, there is none, other than the color. In this red quinoa salad, I chose the red variety just to add more color. For years I used to crave KFC’s coleslaw. Now that us gluten free eaters can no longer eat at KFC, I thought you would appreciate my KFC clone dressing. McCormick spices are gluten-free. Be sure to avoid using mayonnaise jars that gluten-eaters may have used if you are gluten intolerant. Double dipping knives in jars can leave cross-contamination. They dip in the mayo jar, spread it on their bread, and then dip in the jar again. Meanwhile, enjoy this gluten free coleslaw recipe. I don’t know about the area in which you live, but we’ve been having extremely hot temperatures in Central California. Yesterday and today were over 107ºF. Having cooler meals are ideal. This gluten free pasta salad recipe is so easy to make using leftovers you have in your refrigerator. I used the leftovers that were available to me. You can use your favorites. Gluten Free Panzanella Salad

This is one classic Italian dish that I did not grow up with, but absolutely love. You may mistake this gluten free panzanella salad for a traditional salad, but it is heartier than that. Rather than topping each salad with a few croutons, a panzanella consists of many croutons tossed within the salad. In addition, they typically do not contain lettuce. Besides the recipe below, one of my favorite panzanella salad recipes include finely diced tomatoes, hearts of celery, diced seeded cucumber, red and yellow bell peppers, and some fresh, minced garlic and basil. Green Goddess Salad Dressing Recipe (Naturally Gluten Free)

I have been craving this green goddess salad dressing recipe for about a month, and finally got around to creating it. When I looked at the ingredients for Kraft brand Gluten Free Goddess dressing I saw that it contained xanthan gum. Luckily for us gluten free dieters, we usually have this ingredient on hand; however, you don’t have to include if you prefer a gum-free salad dressing. You can just use less water as needed and add vinegar to taste at the end. The best part about this recipe is that t does not contain any blue and yellow food coloring.
