I had misplaced this recipe for about 2 years and wanted to make them for the last couple of months. I was determined to find it today and did! Hurray! It had fallen out of my top kitchen drawer down below all of the other drawers. Here’s my recipe. These gluten-free carrot muffins are unique because they contain some Italian chestnut flour, which really makes the muffin. They are heavy like brownies which make them very satisfying. I hope you enjoy them!

Gluten-free Carrot Muffins
Ingredients
1 cup brown rice flour
2/3 cup Italian chestnut flour
1/3 cup soy flour (or you can use 1 cup total chestnut flour)

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a small portion of what I really would like to call “guilt-free” fudge brownies. These make a great dessert as well as snack. It is vegan, gluten-free, dairy free dessert and low sodium dessert!

Raw Gluten-free Fudge
Ingredients
1 cup pitted dates (not compacted)
1 cup raw walnuts
1 teaspoon raw honey

If you enjoy ambrosia, but are searching for a healthier alternative check out this recipe. This recipe contains Greek yogurt, which contains live cultures; and other ingredients that are known to aid in digestion; and are natural.

Greek Yogurt Ambrosia
Cinnamon’s health benefits are multiple, and aiding digestion is one of them.
FAGE Greek yogurt (non-fat version) does not contain any fat, but has live cultures. A live culture means that it has friendly bacteria which is good for you. My husband is an onion ring lover. I have been working on a healthier, lower fat version compared to the deep fried rings. I explain the various ingredients that you can use for low-fat; milk-free, gluten-free, or high fiber diets. I came up with a very crispy onion ring!
