I have several different gluten free oat bread recipes, one for bread machines, one that is dairy free, and another that contains milk. However, because I am allergic to tapioca flour/starch, I created this oat bread recipe just for me, and others who are allergic to tapioca. Oat bread is my favorite gluten-free bread. It is flavorful, has a great texture, and is healthy for us. I hope you enjoy this recipe. Because it contains a little fava bean flour (which is not bitter), it rises high and makes it lighter. Gluten Free Honey Graham Blondies (Egg-Free with Dairy-Free Options)

For the bottom layer of these gluten free blondies, or dessert bars, if you wish, I used my gluten free graham cracker recipe. I added a bit more honey and butter to soften the crust. You may add sweetened condensed milk, or for dairy-free, coconut milk and honey. After that you top it with your favorite toppings: chocolate chips, nuts, oatmeal, and/or shredded coconut. I skipped the coconut due to allergies. Of course, if you’re dairy-free you’ll use your favorite brand of dairy-free chocolate chips. I’ve listed the most popular, easy to melt brand below. A Healthier Gluten Free Burger with Spinach

A naturally gluten free burger can be tasteless, but this one is full of flavor and is a great way to hide vegetables! When I told my husband I was going to add spinach to our burgers his eyebrows raised appearing very concerned. I smiled, and reassured him he wouldn’t taste it. He enjoys spinach raw, as in spinach salad, but definitely not cooked, though he’d eat it by mixing it with other food on his plate. I served him his burger, along with a salad which contained zucchini, and he enjoyed both, but loved the burger! It’s on the sweet side, and you can omit the chipotle or hot sauce for kids, and possibly the onion, or saute the onion before adding to the raw meat. Commercial Yeast-Free Gluten Free Flatbread (Contains Yogurt)

While watching the Paula Deen Show, I saw her grilling some flatbread, made from a homemade dough. I just had to create a gluten free flatbread recipe and give it a go, myself! My Facebook survey resulted in majority people wanting a yeast-free gluten free recipe and preferred baked (soft), rather than grilled (crispy). So, that is exactly what I created! I was so excited how beautiful it looked, but it tasted just as good! The bread varies in height between 1″ to 1 1/2″. You can use this gluten free flatbread for sandwiches and it makes a great replacement for sourdough bread at the dinner table. You can dip it in olive oil and balsamic. I made sandwiches for dinner with chicken breasts, grilled onion and bell pepper (hubby had cheese, too) and created a balsamic dressing to coat the inside of the bread. I wanted to add avocado, but it would have been just too high for me. It was delish! – my new fave! Enjoy!

Gluten-free Tex Mex Salad

I didn’t feel like cooking the other night and my husband suggested a large gluten-free salad.  I started with lettuce and started adding ingredients one at a time, and ended up with this wonderful Mexican salad, which I thoroughly enjoyed!  You can top it off with broken gluten-free tortilla chips.  I had some blue corn tortilla chips on hand.  It made a bit colorful, as well.  I like saving the broken chips at the bag for salad or casserole use.  Make your own and add your favorite ingredients!
